Optoma Pico PK320 Pocket Projector
The Optoma Pico PK320 Pocket Projector ($450 street) is the brightest pico projector we?ve tested, with a good range of connections including HDMI. It stacks up well against other pico projectors in connectivity, and has decent image quality but for one notable issue we encountered in testing. It?s worth a good look if you?re looking for a powerful pocket projector.
The PK320 is rated at 100 lumens, and has a native WVGA (854 by 480 pixel) widescreen resolution. The projector is quite compact, measuring 1.2 by 4.7 by 2.7 inches. Using our postage scale, I weighted the projector at 0.5 pounds, while adding the power adapter brought the total weight up to just under a pound. The projector also can run off an included, removable lithium-ion cell that can last 90+ minutes in eco mode and 50+ minutes in standard mode, according to Optoma. It can fit in my pants pocket easily enough, though it takes up much of the room.
This copper-brown projector has the look of a larger projector, with the lens near the edge of one of the long sides, as opposed to the ?light saber? appearance of many picos in which the beam emerges from the middle of the narrow end. The focus wheel is in front of the lens, and is tricky to use, even if you can avoid putting a finger into the light path. On one side is the tiny power button; in back are the ports, a good selection for a pico projector: a proprietary port to fit a VGA cable; mini-HDMI; micro-USB for file transfer; AV-in, which fits an included cable with 3 RCA plugs for composite video, and an audio-out jack for headphones.
On top of the projector is a 7-button control panel, backlit with blue LEDs (though you have to quickly make a selection as the buttons soon go dark). The projector includes a tiny remote the same 7 buttons, plus buttons for Off, Bright, and for accessing VGA, HGMI, and Video sources. Working the menus can be awkward, especially at first. The controls (both on the remote and on the projector itself) make use of the arrow keys, but more often as symbol keys to access specific functions than to navigate menus. For instance, the Home screen shows six choices, each identified by a symbol: the right arrow denotes Setup, the up arrow, Music, etc.?they?re useless as arrow keys here in that you can?t scroll anywhere, but they do take you to the functions they symbolize. This takes some getting used to.
You can run presentations computer free from the projector?s 2GB of internal memory, or off of a microSD card. In addition to showing video, you can play music, show photos, or display business documents (Word, Excel, PowerPoint, or PDF) from internal memory, memory card, or thumb drive.
I tested the PK320 from about 8 feet away from our test screen, where it threw a test image about 48 inches diagonally. Image quality suffered in modest ambient light, so it?s best used in a relatively small, dark room.
Image Quality
In testing using the DisplayMate ?suite, I found the PK320?s data image quality suitable for internal presentations, say to a small workgroup?provided that the room is dark and relatively small. You could use it for presenting to potential clients in a pinch, though you might not want to use it in presentations where sharp text or exacting color is paramount. The good news is that (with the exception of an issue that I?ll soon discuss) colors were bright and reasonably true, especially yellows, which often look dull or mustardy with DLP projectors. The projector also showed less of a rainbow effect? distracting red-green-blue rainbow glints, particularly in bright areas against a dark background?than most DLP projectors.
In our text testing, images showed some blur at the two smallest sizes in both black-on-white and white-on-black text, a bit more fuzzy than is typical of a data projector. The other notable issue involved tinting in images with white or gray backgrounds.
When I set up our test unit and turned it on, I immediately noticed a pink tint in the (rather busy) image?s upper left corner. It persisted even after I?d given the projector enough time to fully warm up. In DisplayMate testing, when viewing an image that should have been uniformly white, the tinting revealed itself more fully as pinkish on the image?s left side, and greenish towards the bottom center.
The issue was notable enough that I requested a second test unit from our Optoma rep. I noticed the same issue in the second projector, though it wasn?t as severe: Only a trace of the pink showed up (in the same location), but the green was still apparent, at nearly the same intensity as with the original test unit. It showed up against white to medium gray backgrounds in data images, and with Word and Excel documents. It?s hard to say how pervasive or severe the problem is among PK320s in general based on two test units, but it?s definitely an issue worth looking out for. Optoma says that it is looking into the issue, with an eye towards correcting any irregularities they encounter.
Video Quality
I tested video quality using multiple video sources over several connections, primarily HDMI. The Optoma ML300 is okay for short clips, provided that color fidelity isn?t critical. For the most part, colors were bright and well saturated, but some tinting was apparent at times. Flesh tones tended to look reddish, and some bright areas took on a greenish tinge. Also, there was some loss of detail in bright areas. One plus is that, as was the case in data images, rainbow artifacts were nearly nonexistent and shouldn?t be an issue except maybe for people particularly sensitive to the effect.
Other Issues
The audio from the PK320?s built-in 2-watt speaker is of modest volume, not bad for a pico projector but you?ll want to be close to the projector whether you?re watching a movie or playing music. Fortunately the unit has an audio-out jack for headphones or powered external speakers.
The LED light source will last an estimated 20,000 hours, so you should never have to replace bulbs. The projector is backed by a 1-year limited warranty.
The market for micro-projectors has changed in the past year, with the influx of small LED-based projectors, palmtop sized or a little larger, in the 200 to 500 lumen range. Though there were always a few palmtop projectors, there?s now more of a continuum in side and brightness between pico projectors and ultra-portable business projectors.
The PK320 is among the largest and most powerful pico projectors, and its price is just slightly lower than the new micro-projectors (which cluster in the $500 to $600 range). The PK320 is smaller and lighter than these models, which weigh between 2 and 3 pounds. One drawback, though, is that it has an external AC adapter?which, unlike the projector, isn?t pocketable?while the LED micro-projectors have internal power supplies. The micro-projectors offer higher resolution, generally WXGA (1,280 by 800), and they?re considerably brighter than picos? though we haven?t been impressed with TI?s latest generation of DLP chips that many of them use, as they tend to introduce apparent scaling artifacts in data images that may result in softer focus.
If you?re considering the Optoma Pico PK320, you may want to look at some of these slightly larger and brighter micro-projectors such as the Optoma ML500 ?($650 street, 3.5 stars), Acer K330 ($600 street, 3.5 stars), and the more entertainment-oriented BenQ Joybee GP2 ($599 direct, 4 stars) as well. As for picos, the Editors? Choice Optoma Pico PK301 offers much of what the PK320 brings to the table at a lower price, though it lacks an HDMI connection and is only rated at 50 lumens. The Favi B1-LED-Pico ($280 street, 3.5 stars) is also a respectable choice, though it lacks a battery and so must remain yoked to a wall wart.
The Optoma Pico PK320 Pocket Projector is a powerhouse as a pico projector, bright and with a wealth of connectivity choices. However, it?s less impressive for its price now that bright micro-projectors are available for a little more money, and it still has a few image quality kinks to work out.

In a study published in the Journal of the American College of Nutrition[i], researchers compared risk factors for heart disease, type 2 diabetes and metabolic syndrome of nut consumers versus those who did not consume nuts. Tree nut (almonds, Brazil nuts, cashews, hazelnuts, macadamias, pecans, pine nuts, pistachios and walnuts) consumption specifically, was associated with higher levels of high-density lipoprotein-cholesterol (good cholesterol) and lower levels of C-reactive protein, a marker for inflammation which can lead to a variety of chronic diseases including heart disease.
"One of the more interesting findings was the fact that tree nut consumers had lower body weight, as well as lower body mass index (BMI) and waist circumference compared to nonconsumers. The mean weight, BMI, and waist circumference were 4.19 pounds, 0.9kg/m2 and 0.83 inches lower in consumers than non-consumers, respectively," stated Carol O'Neil, PhD, MPH, RD, lead author on the paper and Professor at Louisiana State University Agricultural Center.
The study looked at 13,292 men and women (19+ years) participating in the 1999-2004 National Health and Nutrition Examination Surveys (NHANES). Intake was from 24-hour recall data and tree nut consumers were defined as those who consumed ? ounce/day.
Tree nut consumption was associated with a five percent lower prevalence of metabolic syndrome, a name for a group of risk factors that occur together and increase the risk for coronary artery disease, stroke and type 2 diabetes. In addition, tree nut consumers had a lower prevalence of four risk factors for metabolic syndrome: abdominal obesity, high blood pressure, high fasting glucose (blood sugar) levels and low high-density lipoprotein-cholesterol levels.
Moreover, previous research by the same authors[ii], showed that although tree nut consumption in the U.S. population is relatively low (mean intake of 1.19 ounces/day for nut consumers) nutrient intakes and diet quality were significantly improved when tree nuts were consumed. The latter appear to be associated with a greater intake of whole grains, fruits, and less saturated fatty acid, sodium and calories from solid fats, alcohol and added sugars. As a result, Dr. O'Neil recommends, "Tree nuts should be an integral part of a healthy diet and encouraged by health professionalsespecially registered dietitians."
Maureen Ternus, M.S., R.D., Executive Director of the International Tree Nut Council Nutrition Research & Education Foundation (INC NREF), adds, "In light of these new data and the fact that the FDA has issued a qualified health claim for nuts and heart disease with a recommended intake of 1.5 ounces of nuts per day, we need to educate people about the importance of including tree nuts in the diet. And, since February is heart month, this is a great reason to go nuts for your health!"

Studies fault Bayer in bee die-off
A corn pesticide manufactured by the German chemical company Bayer has come under scrutiny in two scientific studies that indicate that it is responsible for mass deaths of pollinating bees.?
In a spring ritual as old as life itself, Steve Ellis'?bees?return to their hives day after day loaded with pollen from the dandelions and flowering trees that are in full bloom across central Minnesota.

"You wouldn't think people could get attached to insects," said Ellis, a commercial honey producer from Barrett, Minn. "But it's hard for us to see our?bees?getting injured like that."
Hard enough that Ellis and other beekeepers from across the country last month asked the federal government for a temporary ban on one the most widely used pesticides until its effect on?bees?is clear. They fear it is contributing to a worldwide die-off and the inexplicable phenomenon known as "colony collapse disorder" that is devastating honeybee hives.
"We are asking the EPA to do its job," said Jeff Anderson, a commercial beekeeper from Eagle Bend, Minn. "Give us products that are safe."
The beekeepers and several environmental groups argue in an emergency petition filed with the EPA that the agency failed to require some legally mandated field testing before the pesticide was approved in 2003. New research, including two studies published last week in the journal Science, raises serious questions about its effect on pollinators of all kinds, they maintain.
The EPA said it has based its continued approval on hundreds of studies. In 2010, the agency said no data show that?bee?colonies are harmed by exposure. Nevertheless, it agreed to accelerate its routine review of the pesticide ? meaning it will be completed in 2018.
Meanwhile, officials with the manufacturer,?Bayer?CropScience, say they are confident that the research will continue to prove the product is safe for?bees?when used appropriately.
"I tend to believe that science will win out over emotion," said Jack Boyne, director of communications for?Bayer?CropScience.
The beekeepers and others say they filed the emergency petition because they fear that the EPA's review process will deliver a verdict too late for the nation's honeybees and the farmers who rely on them.
"Seventy percent of crops ? apples, oranges, zucchini, melons, strawberries ? they all need pollinators," said Vera Krischik, an associate professor of entomology at the University of Minnesota who studies the pesticides and?bees. "It's a huge issue."
Then there are the unknown numbers of bumblebees, wasps, butterflies and other wild pollinating insects that fill the same role across the natural world.
"We are headed in a very dangerous direction," Ellis said.
Anderson said beekeepers have always been on the front lines of the nation's pesticide wars; that's how he got into business in the first place. His wife's grandfather moved his California beekeeping business to Minnesota in the early 1960s after another pesticide, Sevin, critically damaged his agricultural pollinating business.
Anderson went on to win a landmark case at the Minnesota Supreme Court against the state Department of Natural Resources over pesticide drift that killed his?bees.
Like Ellis, he is among the gypsy beekeepers who follow the seasons, pollinating almonds, cherries and other crops in the South and West in winter and returning to Minnesota in the spring to make honey.
The pesticides beekeepers are fighting now are different than those of the past, Anderson said. Those were applied at predictable times, making it easy to keep?bees?out of harm's way.

Malaysia Airlines has taken steps to create a no-child zone on some of its flights.
A humorous commercial showing kids flying cargo may have been an April Fool's Day joke by?Canadian airline WestJet, but?many travelers do harbor hopes for child-free flights.?
Now Malaysia Airlines is taking steps to create a no-child zone on its flights.
When the airline?s first Airbus A380-800 takes to the skies on July 1, flying the Kuala Lumpur?London route, families with children won?t be welcome in the airplane?s upper deck, which will have 70 economy and 66 business class seats.
Instead, those passengers will be asked to book in the 350-seat economy class zone on the main deck, which the airline has designated as its child-friendly zone.
In a statement, the airline cites the availability of extra family-friendly facilities, including eight toilets for the lower-deck economy section and a dual aerobridge that offers ?speedier/faster embarkation and disembarkation for this group of passengers.??
But the policy may have more to do with the comfort of its upper-deck fliers.??
?Malaysia Airlines is trying to make its premium product on the A380 more appealing to the high-yielding business passengers,? said Shashank Nigam, CEO of SimpliFlying, a company specializing in airline branding and customer engagement. ?They value their peace and quiet and [this way] can rest assured that they won't be disturbed by kids on long-haul flights.?
Along with the new Airbus A380-800s,?Malaysia Airlines has already reconfigured the first class cabins on the airline?s Boeing 747s to no longer accommodate bassinets, effectively making that section baby-free. Bassinets, however, are available in?business or economy class.
Some have called Malaysia Airline?s plan discriminatory to families. But child-free sections on airplanes would be ?no different than?the ?quiet cars? provided by train companies,? said Suzanne Rowan Kelleher, editor-in-chief of WeJustGotBack.com. ?My guess is that many parents?would opt for kid-free zones on planes when they're traveling without their children.?

Kelleher said many family-friendly hotels and resorts now have designated spaces, such as spas, adult-only pools, fitness rooms and formal restaurants, where kids are not allowed. And most cruise lines offer adult-only areas such as pool decks and quiet restaurants. ?Even Disney Cruise Line does this,?much to the delight of adults on board,? said Kelleher.
Joe Brancatelli, publisher of the business-travel website JoeSentMe.com, understands those who would want babies and young children banned from the premium-class cabins. But he suspects that when it comes to other carriers following Malaysia Airlines' lead, dollars may overrule toddlers.
?I doubt anyone will match, although Asia is a unique market,? said Brancatelli. ?But it comes to this: If a parent wants to pay to bring a child in a premium cabin, well, it's hard to turn away the money.?
He may be right. In a memo clarifying its policy, Malaysia Airlines states, ?Where there is overwhelming demand for seats in economy class from families with children and infants, resulting in full load in the main deck, we will still accommodate such demand in the 70-seat upper deck economy class zone of our A380.?

No matter how you feel about "The Twilight Saga" as a film franchise, Stephenie Meyer's vampire romance inspired millions of young readers to pick up a book and read. Anything that gets young people to lose themselves in the written word — whether it's "Twilight," "The Hunger Games" or "Game of Thrones" — is a positive step.
This week's "Twilight" Tuesday is all about understanding what it is exactly about the characters in these books, particularly the very popular YA genre, that gets us obsessed and day-dreamy about them. Why do we love Bella and Katniss? What does that say about young readers today and the future of the genre? I took my questions to a few very informed experts.
"The thing with the Bella phenomenon, she was kinda like an empty vessel, and I feel like part of the appeal there was just a really blank slate on which people could project their own identities," said Lauren Oliver, best-selling author of "Delirium" and "Pandemonium." "It was fantasy. It allowed you to float up through it.
"In terms of heroines now, I think what's really interesting about them is that, many of them, for example 'The Hunger Games,' certainly in my books, the characters don't necessarily start out being so fierce and badass, which I think to some extent would be not even off-putting, but alienating," she continued. "Because I'm not sure that people feel that way. I do think what's significant is that these characters are portrayed as being very much at the start, normal girls, but very moral normal girls who because of a set of very extraordinary circumstances are able to step into strength that they didn't know they possessed. I think that really resonates with people because everybody I assume would like to feel that, if given the chance, they could be someone special."
Dr. Jenn Berman, host and therapist on VH1's "Couples Therapy" said the love for both types of heroines hearkens back to classic literary characters we've loved for centuries.
"Both characters are appealing on a very archetypal level. One is very much a damsel in distress, this sort of empty, insecure vessel, which I think is very identifiable for young women," she explained. "The other is sort of this superhero, strong, independent woman who doesn't need anybody, which I think is also something that is very inspirational for women. In each one of us we have both of those entities, and as a result, people are drawn to these characters."
Kristin Rens, senior editor at HarperCollins, pointed out that while Bella and Katniss are pretty different, they also share a few qualities to which a lot of teens relate.
"Bella and Katniss are obviously very different characters. But one thing they have in common is their drive — the fact that they both very much know what they want, and they won't stop until they reach their goals," Rens said. "When you're a teen, there are so many parts of life that are out of your hands, so there's something very aspirational and appealing about characters like Bella and Katniss who are able to take control of their own lives, even when the odds are stacked against them."
Dr. Berman added that we all have a little damsel in distress in us, as well as a superhero; the trick is balancing them.
"In order to become fully formed people, we have to find a way to both make friends with our damsel in distress and find a way to rescue her on our own," she said. "As long as you understand why and what you need to do with that archetype, it's OK, but to romanticize the damsel-in-distress archetype, you set yourself up for unhealthy relationships. What you do [to prevent that] is you say, 'Wow, there is a part of me that would really like to be rescued, but I'm not going to give into that part of me. I'm going to rescue myself instead.' "
The same goes for the superhero Katniss archetype, however, in that romanticizing that type of woman can also set you up for an unhealthy perspective.
"Healthy relationships aren't interdependent," Berman said. "If you are an island, then you're not having an emotionally intimate relationship, so the truth of a healthy relationship lies somewhere in between both of these archetypes."

Every week (or so) I post a quick Q&A with one of our bloggers on the network, so you can get to know them better. This week, I chat with Dana Hunter from Rosetta Stones.
Hello! Let?s start with first things first. What is the name of your blog and why did you choose that name ? what does it mean?
After long and careful consideration (about an hour), and having a few people vote on the possibilities, I chose Rosetta Stones. I wanted a name that evoked the idea that rocks have ?languages? of their own, which we?ve learned how to translate. We found the Rosetta Stone, which unlocked ancient languages: rocks in the field do the same thing for geologists, allowing us to read the stories contained in them. Reading the rocks has taught us amazing things about how Earth and our solar system began, evolved, and act.
Where does the artwork for your banner come from, and what are you trying to convey with it?

I raided the house for interesting hand samples and stuck them on a tile of brown marble from Home Depot. I haven?t got good lighting in this apartment, so I ended up photographing them on the bathroom counter. There?s all sorts of wonderful stuff in there (the banner, not the bathroom): garnet mica schist and orthogneiss from the Cascades near Ross Lake, Washington; blueschist from Bandon, Oregon; turbidites with plant fragments from Oregon; pink rhyolite with garnets from somewhere in the Pacific Northwest; a bit of phyllite with a wonderful quartz vug from the Olympic Mountains, Washington; an opalised fossil clam from Australia; a bit of the Barringer Meteorite from Barringer Meteor Crater, Arizona; beach pebbles from Rosario Head, Washington; conichalcite from Sonora, Mexico; astrophyllite from Russia, and linarite from Arizona. Each one of those stones has got a story, which I?ll tell as we go along. And they?re shiny. I wanted my banner to reflect the fact that geology is diverse, interesting, and quite often gorgeous.
Hopefully I succeeded, despite having to shoot it in the bathroom.
Tell us more about yourself ? where are you from, how did you get into science?
I was born in Indiana, moved to Arizona as a small child, and lived there for thirty years. Then I surrendered to the siren song of Seattle. I loved things like geology and astronomy as a kid ? thought I?d even be an astronomer at one point, but it turned out I?m an SF writer. And I liked SF because I started on the fantasy side and thought that meant I didn?t have to do all the hard science stuff. I never completely lost my love for science, but high school nearly beat it out of me. I hated biology for years because of it.
Fantasy brought me to science, strangely enough. I didn?t just want everything to be magical ? boring and far too easy. So I started reading cosmology, astronomy, and physics. Worldbuilding forced me to take a closer look at how our world works. And then I had to face facts: if I?m going to have aliens, I must know how they evolved, no matter how much I despised squishy stuff like biology. So I went spelunking on the intertoobz and came across PZ Myers, who introduced me to the whole evolution vs. creationism debate, which got me hooked on hard science and even made me adore biology.
How did you get into science blogging and science writing? What were the early influences on you regarding your blogging style and topics?
PZ turned me into a science writer. He gave a talk in Seattle in June of 2008 that turned me from a political blogger into a sometime-science blogger. Science turned out to be much like potato chips: I started wanting more and more. And the science I?m best at and have all round me is geology. Then the geobloggers found me, fostered me, and here I am today, writing Rosetta Stones! Not precisely what I anticipated when I started this journey, but the unplanned detours are quite often the best.
We could be here all day talking about my influences, there are so many. But the critical ones, aside from PZ, were Anne Jefferson and Chris Rowan at Highly Allochthonous, which was the first geoblog I encountered, and Ellen Morris Bishop. Here were these folks writing up geology with a wonderful mix of enthusiasm, conversational English, and intriguing jargon clearly explained, complete with incredible photos. That?s what I decided I must do. Science and scenery, passion, prose and poetry, all in one. Gorgeous!
What is your blog about? Who is your target audience, and why do you think people should read your blog?
Rosetta Stones is about the good science of rock-breaking. Geology gets shuffled off to the side in the sciences: people are all about biology and physics and astronomy, and sometimes seem to forget such a thing as geology exists. Earthquakes and volcanoes get some press, yeah, but it?s so much bigger than that. Charles Darwin started as a geologist and remained one to his dying day. The advances we?ve made since his time are every bit as exciting as the leaps in our understanding of other sciences. Geology impacts everything. It?s vitally important to understand that where we live, the metals and crystals in our gadgets, even the diversity of life on Earth, all owe something to geology. And when we head for the stars, we?ll be doing geology on other worlds. We?ve already sent a geologist to the Moon. We?ll send one to Mars, and beyond. Geology is necessary, but it?s also beautiful.
And it?s a science that?s very friendly to ordinary people. You don?t have to be an expert with a PhD to understand it. Regular folks can speak the lingo. Rosetta Stones is there to entertain both geologists and layfolk who didn?t have any idea they could ever like geology.
Understanding how the world works changes your entire perspective. It becomes something far more than a place we happen to live on that has got some nice scenery. With geology, you can hold millions, even billions, of years in the palm of your hand. You can make better decisions about where and how to live. And you can sit down with a little rock in a garden and hear a fantastic story. Reason enough to read a blog about it, wouldn?t you say?

^ Hey Canbits, I?m an expert at gravy??. 1. Throw away Bisto, Oxo or any other powder/gravy granule type product 2. When roastin your piece of meat (Beef, Pork, Lamb, Chicken) add a couple of onions (cut in half, skins left on), a couple of carrotts (quartered) an a stick of celery (chopped into pieces about an inch long) for the last hour or so of roastin time. 3. When your meat is done, remove it from the roastin dish an leave it on a warm plate to rest. Skim off any excess fat from the roastin dish that the meat has been cooked in then place the roastin dish on the hot plate on your stove. Mash up the vegetables in the roastin dish with the thing that you use to mash your potatoes with and add a tablespoon of plain flour, then just push the stuff around a bit, scrapin all the bits of meat up that have stuck to the bottom of the dish when the meat was roastin. (The longer you heat this mixture, the darker your gravy will be. Keep your eyes on it an keep movin it around so it doesn?t burn an stick to the bottom of your roastin dish) 4. Add your stock a bit at a time (which you will have made earlier from the water that you strained off from the pan you boiled your carrotts in, addin a vegetable stock cube if you wish to enhance the stock) until you have a gravy of the consistency you require (I prefer a thinner gravy, but you can thicken it up with cornflour if you like it thicker) Keep tastin the gravy as you are doin this, addin more salt or pepper until it is as you like it 5. Pour the gravy through a sieve into another pan, makin sure that you squash all the remainin vegetables in the sieve, squeezin out every bit of the taste in them 6. Ladle some of the gravy over whatever meat you are eatin, pour the rest into a gravy boat that you have had warmin gently in the oven 7. Enjoy it, keepin an eye on Mrs Canbits and how many times she pours more gravy onto her plate, as she surely will??? It seems like a bit of an effort Canbits, but it?s not really an I guarantee it?s well worth it, you?ll never use Bisto or the likes again. It?s considered good form to mop up the gravy with a piece of thickly buttered bread in my house as well. There probably wont be any left over for freezin tho?? Now your talkin Canbits, Bbq?in is my favourite style of food. Not crappy burgers an cheap sausages,but proper stuff cooked well on a Bbq. Chuckwow takes his Bbq?in pretty seriously, he sent me a link to a great site Barbecue and Grilling Recipes from the BBQ Pit Boys Barbecue and Grilling Show I watch this for hours, the Brisket recipe (cooked for 8 hours) is gonna be my next project, I?m currently buildin ( well helpin) to build my next Bbq/Smoker, it?s gonna be a big un that you could get a pig in?. ^ Hey Canbits, I?m an expert at gravy??. 1. Throw away Bisto, Oxo or any other powder/gravy granule type product 2. When roastin your piece of meat (Beef, Pork, Lamb, Chicken) add a couple of onions (cut in half, skins left on), a couple of carrotts (quartered) an a stick of celery (chopped into pieces about an inch long) for the last hour or so of roastin time. 3. When your meat is done, remove it from the roastin dish an leave it on a warm plate to rest. Skim off any excess fat from the roastin dish that the meat has been cooked in then place the roastin dish on the hot plate on your stove. Mash up the vegetables in the roastin dish with the thing that you use to mash your potatoes with and add a tablespoon of plain flour, then just push the stuff around a bit, scrapin all the bits of meat up that have stuck to the bottom of the dish when the meat was roastin. (The longer you heat this mixture, the darker your gravy will be. Keep your eyes on it an keep movin it around so it doesn?t burn an stick to the bottom of your roastin dish) 4. Add your stock a bit at a time (which you will have made earlier from the water that you strained off from the pan you boiled your carrotts in, addin a vegetable stock cube if you wish to enhance the stock) until you have a gravy of the consistency you require (I prefer a thinner gravy, but you can thicken it up with cornflour if you like it thicker) Keep tastin the gravy as you are doin this, addin more salt or pepper until it is as you like it 5. Pour the gravy through a sieve into another pan, makin sure that you squash all the remainin vegetables in the sieve, squeezin out every bit of the taste in them 6. Ladle some of the gravy over whatever meat you are eatin, pour the rest into a gravy boat that you have had warmin gently in the oven 7. Enjoy it, keepin an eye on Mrs Canbits and how many times she pours more gravy onto her plate, as she surely will??? It seems like a bit of an effort Canbits, but it?s not really an I guarantee it?s well worth it, you?ll never use Bisto or the likes again. It?s considered good form to mop up the gravy with a piece of thickly buttered bread in my house as well. There probably wont be any left over for freezin tho??
